Our nitrite free, Uncured Cabernet Salami is a must try. The tannin-heavy Cabernet Sauvignon and the creamy fatness of pork soften and complement one another to create a sophisticated cured meat. The oak currents shape and move the cab ebb into the natural sweetness of the pork, giving the salami a mild oak flavor. We made sure to round out the bitter tannins with just enough pork fat to release the thick-skinned grapes' sweet, welcoming aroma.
